It all started here, at the Granja Azul in Santa Clara, back in the 1950s, at a time when no one could have foreseen such an overwhelmingly Peruvian flavor. The Swiss Roger Schuler and his chicken farm were on the verge of going bankrupt and disappearing forever before things took an unexpected turn, sparked by the heat of charcoal. And so began this love story, where each steaming piece of chicken carries within it tradition and the eternal gratitude of each and every Peruvian.

Whatever Chef Mitsuharu “Micha” Tsumura touches turns to art, even when the focus is on something so common and well-known as pollo a la brasa. Together with César Choy, his business partner and passionate accomplice, the restaurant made the leap from delivery to dine-in, where traditional Peruvian flavor is given an Eastern touch in an effort to reinvent a dish we all know so well, but which nonetheless continues to surprise us when garnished with arroz chaufa, along with auteur sauces and spicy chili pepper concoctions.
