When Yaquir Sato took over the kitchen at Costanera 700­­, the mythical restaurant founded by his father four decades ago, he gave it his own personal twist while staying true to its roots and honoring the legend left behind by Don Humberto. A temple of cebiches, tiraditos, grunt fish, and Nikkei dishes, this restaurant will also surprise you with other exquisitely cooked Peruvian dishes, such as the tasty ají de gallina or the crispy roast suckling pig. Unique in many ways, it also upholds one of the principles of traditional Japanese cuisine: the unmatched freshness of its fish and seafood, which Yaquir selects with the same meticulous approach that he uses when preparing his most celebrated dishes.
