An extraordinary cook who has learned the secrets of flavor through a lifetime’s work, Jacinto Sánchez captains a cozy huarique in Lima’s historic center. Don Jacinto is the name of the restaurant he runs together with his wife, Rosa Mayhua, in the Galería San Agustín building right on Jirón Ica.
There, from Monday through Saturday, they offer delicious prix fixe menus where the chef’s special touch can be found in the papa rellena with its soft crust, the well-balanced seasoning, and the fried dishes done to perfection every time. They also offer a seafood trio—chaufa de mariscos, cebiche, and chicharrón—and three dishes à la carte: tallarín saltado, cebiche, and a mouthwatering lomo saltado prepared in Jacinto’s inimitable style.
